Ingredients:
1 cup cooked CIC Low GI long grain rice
1 chicken breast (boneless, skinless)
1 tbsp olive oil
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley (chopped)
Instructions:
Season chicken with olive oil, paprika, salt, and pepper.
Grill or pan-sear for 5–6 minutes per side until fully cooked.
Slice and place on top of the rice.
Sprinkle with chopped parsley and serve with a side of steamed vegetables
